Black Bean and Quinoa Salad with Citrus Dressing

Serves 6: 1/2 servings

Ingredients:

  • 1 cup cooked quinoa
  • ½ cup fresh orange segments (about half of an orange)
  • ¼ cup diced red bell pepper
  • 1 cup no-salt-added black beans
  • ½ cup no-salt-added corn kernels
  • 2 tablespoons chopped red onion
  • 1 tablespoon chopped fresh cilantro
  • Pinch of ground black pepper

Citrus Dressing

  • ¼ cup freshly squeezed orange juice (juice from about half of an orange)
  • ¼ cup unseasoned rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon apple juice concentrate, undiluted
  • 1 teaspoon no-salt-added or low-sodium stone ground mustard
  • 1 teaspoon dried oregano

Preparation:

  1. In a large serving bowl, combine salad ingredients: quinoa, orange segments, diced red bell pepper, black beans, corn kernels, chopped red onion, and fresh cilantro. Set aside.
  2. In a separate container with a tight-fitting lid, combine Citrus Dressing ingredients: fresh orange juice, rice vinegar, garlic, apple juice concentrate, mustard, and oregano. Shake well to combine.
  3. Pour desired amount of the Citrus Dressing on top of the salad and toss together. Sprinkle on black pepper, as desired.
  4. Let chill in refrigerator until ready to serve.

Check your local grocery store for no-sugar-added mandarin oranges as a convenient replacement for the orange segments, and then use the juice for the Citrus Dressing.
