Serves 6: 1/2 servings
Ingredients:
- 1 cup cooked quinoa
- ½ cup fresh orange segments (about half of an orange)
- ¼ cup diced red bell pepper
- 1 cup no-salt-added black beans
- ½ cup no-salt-added corn kernels
- 2 tablespoons chopped red onion
- 1 tablespoon chopped fresh cilantro
- Pinch of ground black pepper
Citrus Dressing
- ¼ cup freshly squeezed orange juice (juice from about half of an orange)
- ¼ cup unseasoned rice vinegar
- 1 teaspoon minced garlic
- 1 teaspoon apple juice concentrate, undiluted
- 1 teaspoon no-salt-added or low-sodium stone ground mustard
- 1 teaspoon dried oregano
Preparation:
- In a large serving bowl, combine salad ingredients: quinoa, orange segments, diced red bell pepper, black beans, corn kernels, chopped red onion, and fresh cilantro. Set aside.
- In a separate container with a tight-fitting lid, combine Citrus Dressing ingredients: fresh orange juice, rice vinegar, garlic, apple juice concentrate, mustard, and oregano. Shake well to combine.
- Pour desired amount of the Citrus Dressing on top of the salad and toss together. Sprinkle on black pepper, as desired.
- Let chill in refrigerator until ready to serve.
